Meet Chloe Bott - Owner

I’m Chloe, the owner and heart behind Coalescence Event Services.

Born in Tucson and raised in the lush beauty of Washington, I grew up surrounded by hospitality. As a kid I loved offering coffee to clients in my mom’s salon and watching how small gestures made people feel seen and cared for. That instinct never left me. It grew into a career that now spans more than 20 years in hospitality and over a decade in leadership and management.

I have worked in nearly every corner of this industry, from restaurants and bakeries to catering kitchens, craft bartending, fine dining, fast paced bars, weddings, and large scale events. Catering became a major focus for me, and while attending culinary school I worked as a Catering Manager for a small woman owned business in Portland, running full event production while in school. I led teams, coordinated logistics, managed clients, and executed events from start to finish. That season of my life taught me how to stay calm under pressure, solve problems quickly, and carry responsibility for every moving piece of an event.

During that time I realized I wanted to step fully into the events world and build something of my own. I pursued a degree in Hospitality Management to deepen my understanding of operations and leadership and to strengthen the bridge between culinary work, service operations, bar service, and event execution. I wanted to create a business that could be a true culmination of all my skills combined, creative, operational, and deeply people focused.

At my core, hospitality has always been about connection. I thrive on creating spaces where clients feel supported, teams feel confident, and guests feel genuinely welcomed. I love love, I love celebrations, and I love being the person behind the scenes who makes everything feel easier for the people at the center of the moment.

Coalescence is the realization of that vision. The word means the merging of elements to form a unified whole. For me, it represents bringing together years of culinary experience, craft bartending, management leadership, and heartfelt hospitality into one purpose. Coalescence Event Services exists to create events that are seamless, personal, and full of warmth. My goal is simple. I want every client to feel cared for, understood, and completely at ease, knowing their event is in experienced and loving hands.

Meet Chef Lela Cross

Chef Lela Cross is an Olympia based consultant, author, restaurateur, and chef celebrated for transforming local, seasonal ingredients into unforgettable, market fresh menus that reflect the spirit of the Pacific Northwest. With a career spanning more than three decades across restaurants, bakeries, cocktail lounges, catering programs, and food halls, she brings both artistry and intention to every plate she creates.

A respected leader in the regional food community, Chef Lela has played a meaningful role in shaping Olympia’s culinary landscape. She was instrumental in the development and curation of 222 Market in downtown Olympia, helping guide the vision of the artisan food hall and supporting the selection and mentorship of local vendors and makers. Her work there reflects her deep commitment to collaboration and to creating spaces that celebrate local talent and Pacific Northwest ingredients.

In addition to her influence in Olympia, Chef Lela contributed to the design and culinary vision of the Craft District in Tumwater, further expanding opportunities for community centered food experiences. Throughout her career she has been involved in the leadership and creative direction of several beloved local establishments, where she built thoughtful menus and welcoming spaces that have left a lasting impression on the region’s dining culture.

Chef Lela is known for her collaborative spirit and her dedication to sourcing responsibly from farmers, fishers, and artisans throughout the Northwest. Whether she is designing custom event menus, mentoring emerging culinary professionals, or writing her forthcoming cookbook EAT!, her philosophy centers on connection, seasonality, and the celebration of place.

Her work extends beyond individual kitchens into the broader fabric of the Olympia and Thurston County food community. Through consulting, mentorship, and creative partnership, Chef Lela continues to shape vibrant food experiences that bring people together and highlight the richness of local ingredients.
